Casseroles are pretty endless when it comes to ingredients, however, finding one that everyone loves is always good! This was one of those! Doritos + Kids = a sure hit. This Cheesy Chicken Doritos Casserole was pretty easy to make too! If you have left over chicken it is even quicker as you can use that in place of the chicken called for in the recipe below!

Cheesy Chicken Doritos Casserole
What you need:
3 cups of cooked chicken cut up into 1 inch bits (if you have leftover chicken use that or a Rotisserie chicken works well too!)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel
1 can of corn (drain it)
1 small can of green chile (optional but we love it with it!)
8 oz sour cream
2 cups shredded Mexican Blend cheese (separated)
3/4Â of a bag of Nacho Cheese Doritos
How to make Cheesy Chicken Doritos Casserole:Â
Preheat  your oven to 350 degrees.  Spray a casserole pan with cooking spray.Â
First crush your bag of Doritos, it’s easiest to do it in the bag and then dump it in the bottom of your casserole dish as the base.
Mix together ALL of your ingredients in a separate bowl so they are well mixed. Set aside one cup of your cheese for the topping.
Once mixed, pour this over the Doritos.
Cook for 20 minutes, uncovered.
Pour the remaining cup of cheese over the top of the casserole and cook for another 5-8 minutes until melted.

What is Rotel?
Rotel is a brand of diced tomatoes with green chiles. Any brand works 🙂
I use a very similar recipe for chicken enchiladas or chicken enchilada casserole. One can of cream of chicken and one can of cream of mushroom. One can of mild rotel. 8 oz of sour cream. 2 lbs of chicken (I grill mine with salt and pepper on a George Foreman) shredded. Mix it together in a bowl. For casserole: layer tortillas on the bottom of a baking dish then add half of the mixture and half of a bag of finely shredded Mexican cheese then do another layer in that order. Bake for about 35 minutes at 350 or until cheese is melted and gooey. Adding tortilla chips tastes amazing for added crunch. For enchiladas: same ingredients but put into 12 burrito sized flour tortillas, sprinkling some Mexican cheese into each burrito, roll and put into greased baking dish. Bake for 25 minutes at 375. Add remaining cheese on top of burritos. Bake for another 15 min or until cheese is melted. Then add a can of chile Verde and bake for 5 to 10 min just to warm the sauce. Makes delicious enchiladas and the left overs taste even better!

do i have to use the mushroom soup?
You can use cream of chicken in place of the cream of mushroom so use 2 cans total cream of chicken.

I have made this dish & my family Loves it..
Sounds good, going to try it tonight. Though I haven’t made this yet it sounds devoid of much flavor having no seasonings at all listed in the ingredient list. I could see a dash of cumin and/or chili powder, a pinch of cilantro, and maybe a dash of red pepper added to this to boost the flavor above that of unseasoned cream.
Hope it turns out well, switched the nacho doritoes to the ranch buffalo wings flavor… And I forgot to spray the pan…

This sounds really good but what size bag of Doritos do you use?
I use the regular size bag (not the big party bag) and use about 1/3 of it.
