What to cook with ground beef? It is a question I often ask myself (or even on Facebook!) when I want something new. One of my favorite “go-to” meals with Ground Beef is actually Mexican Lasagna. There are many ways you can put this one together, but here is my favorite. Enjoy!

Easy Mexican Lasagna
What you need:
2 Medium Flour Tortillas
1 Can Pinto Beans or Ranch Style Beans (I prefer Ranch style, but you can use Pinto too)
1 tbsp Red Chile Powder
1 lb Browned Hamburger meat
2 Cups Shredded Cheese (Mexican blend)
1 small can of Green Chile (or fresh if you have access to it!) (Optional)
How to make Mexican Lasagna:
Pre-heat the oven to 350
Brown your Hamburger meat over medium heat until well browned, cook with 1/2 tbsp of Red Chile Powder.
Once browned, add in your beans and the other half of your Red Chile powder. Cook until the beans are heated too. If you are adding in green chile, add that too — mixing it in well.
Place one tortilla on the bottom of a 9″ round pan (glass or a regular cake pan will work)
Cover in a light layer of the shredded cheese, pour half of your meat mixture on top, then layer with more cheese.
Place the next tortilla on top of the first half of meat. Again, layer with cheese, the remaining meat and then the remaining cheese.
Cook for about 20 minutes in the oven. Then enjoy!
