Last week when I posted the Rice a Roni recipe, the picture showed some breaded pork chops. If you have the pork chops and want an easy recipe, these are a cinch. I like to use the ones that are a little thicker, but if you only have a thinner cut make sure you reduce the cooking times.
Just a few things are required:
4 pork chops
2 eggs, lightly beaten
1/4 cup milk
1 and 1/2 cup Italian seasoned bread crumbs
2 tbls olive oil
Italian seasoning
Garlic powder
Blend eggs and milk in a small bowl that you can dip the chops into. Put the bread crumbs in a separate bowl. In a large skillet heat up the olive oil over medium heat. Dip each chop into the egg and milk and then into the crumbs, coating evenly. Sprinkle each with the Italian seasoning and garlic, place them in the skillet and brown for 4 to 5 minutes on each side. Transfer them to a baking dish, and bake them for 20 to 25 minutes at 325 degrees.
What I really like is how fast they are from beginning to end. That means they can be a last minute dinner idea.
