So today I wanted to try something different and the result was AHH-MA-ZING. These Pecan Fudge Cookie Bars are seriously to die for. We took a tray of them (half the batch!!) into my hubby’s store and he was immediately asked for the recipe too. They are rich so you will want to make small bars!

Pecan Fudge Cookie Bars
What you need:
1 Pouch of Sugar Cookie Mix (1lb 1.5oz size)
2 Tbsp all purpose flour
1 Egg
1/3 cup butter melted
1 bag (2 cups) Milk Chocolate chips
1 can Sweetened Condensed Milk
2 tsp Vanilla
1 Egg
1 Cup chopped pecans
1/2 Cup White Chocolate Melting Wafers
1 tsp vegetable oil
How to make Pecan Fudge Cookie Bars:
Preheat the oven to 350 and lightly butter a 9×13 pan.
Mix the Sugar Cookie Mix, Flour, melted butter and one egg together and press it into the bottom of the pan evenly.
Cook the cookie base for 15-17 minutes until it is light golden brown, let it cool for 10-12 minutes while you make the fudge.
Mix 1 cup of the chocolate chips + 1/2 the can of condensed in a small pan over med-low heat until smooth. Stir while cooking.
Remove from heat and add in 1 egg, the second half of the condensed milk and the Vanilla. Stir until well mixed.
Pour it evenly over the cookie base.
Sprinkle the remaining chocolate chips + the pecans over the top.
Cook for 23-25 minutes until set.
Allow it to cool for 30-45 minutes.
Melt your White chocolate wafers with 1 tsp of vegetable oil in the microwave, stirring every 30 seconds until smooth and fully melted. I used a plastic bag to drizzle the white chocolate over the whole thing. I just poured it into the plastic bag and cut a small hole in a corner.
Once set, cut into small squares and enjoy! Again — these are RICH so less is more 😉
