Pumpkin Cheesecake Bars

Can you tell I am ready for Fall?! Being pregnant, I am definitely ready for the cooler weather. But even without the cooler weather, I LOVE the smells and treats that are just associated with that time of year! Pumpkin, Apple Pie, Turkey… mmmm 🙂

Pumpkin Cheesecake Bars

What you need:

For the base:
1 cup Flour
3/4 cup Brown Sugar
6 tbsp Butter
1 cup Quick Oats

For the Filling:
8 oz softened Cream Cheese
3/4 cup Sugar
15 oz Pure Pumpkin
2 tsp Pumpkin Pie Spice
3 Eggs

For the Topping:
16 oz Sour Cream
1/3 cup Sugar
1/2 tsp Vanilla

How to make Pumpkin Cheesecake Bars:

Preheat your oven to 350.
Line a 13×9 pan with parchment paper.
Combine the flour and brown sugar.
Cut the butter into mixture, until it is nice and lumpy.
Add in oats and stir until mixed.
Press mixture into the bottom of the pan.
Bake for 15 minutes.
Beat together your cream cheese, eggs, 3/4 cup sugar, pumpkin and spice until well blended.
Pour the pumpkin cheesecake into the pan over the base and level.
Bake for 25 minutes or until set in middle.
Mix sour cream, 1/3 cup sugar and vanilla together for your topping

Spoon mixture over cooked pumpkin layer and spread evenly.
Bake about 5-8 minutes or until set.
Cool completely before cutting.
