This one is a keeper, especially for those hot summer days when you absolutely don’t want near a stove. Even if you do not add any meat to it, or on the side, you will get some protein with the blue cheese and almonds. I have made it twice already, one time solo and the other time with a chicken breast. If you do it solo, this recipe is probably good for two.
Ingredients:
1 large avocado
1 pint of fresh strawberries, de-stemmed and quartered
5 – 6 cups fresh spinach
4 oz crumbled blue cheese
1/3 cup sliced almonds
Your favorite dressing, I used poppyseed, but others will work
I only had larger spinach, so I pulled it into smaller pieces, or you can get baby size. Other than that, it is a no-brainer putting it all together. Each of us added our own dressing, but if you mix it in the whole salad, make sure you do so right before serving.
When I first saw this recipe, it looked appealing, but I was surprised at just how delicious it is. Cool and filling. Next time I might add some sliced yellow pepper and/or red onion. And, I am sure some chicken would also be an addition. Please let me know it you try any versions of your own.
