Isn’t it great when you have an out of town guest who shares new ideas for your meal planning! My Aunt Linda came to visit last week, and to help me organize my garage sale. Extra bonus… I learned some new recipes. This delicious dish takes about 30 minutes from beginning to serve n’ eat time.
Here is what you need:
1 lb large shrimp, fresh or frozen
Half lb broccoli or asparagus
15 -20 cherry tomatoes, cut in half or 1 large tomato chopped
4 or 5 fresh basil leaves, chopped finely
8 oz cooked penne pasta
Quarter cup chicken broth
2 large cloves garlic, minced
Salt and pepper
Parmesan cheese
Boil shrimp until pink, and then peel. Using a large skillet, saute garlic and shrimp briefly. Add your green veggie, pasta and chicken broth along with the basil, salt and pepper, and cover to heat. When it is heated throughout add the tomatoes until hot as well. Pour into a large pasta bowl and top with the Parmesan cheese. Serve immediately. Pasta, veggies and protein all in an easy to prepare delight.
