Okay, it is always good to give credit where credit is due. Thanks to Uggie, ( I created that name for my Uncle Eddie when I was just learning how to talk, and it stuck.) my mom learned this recipe for quick, easy and spicy chicken wings. Add some salad or rice, and you have a pretty good meal. Or you can serve as an appetizer.
What you need:
Chicken Wing Drumettes – about 40
Original Barbeque Sauce – 2 21.6 oz bottles
Fresh Jalapenos – between 4 and 8
Rinse off the chicken and drain. In a large pot, mix the sauce and wings. Chop up the peppers into little pieces and add to the mix.
Heat this up to slight boil, cover and turn down to low. Cook until chicken is tender – about an hour, stirring often. Dish out the drumettes and arrange on a cookie sheet. Add some of the sauce to cover them and place under the broiler on low for 5 to 10 minutes. Keep an eye on them since ovens tend to vary. You want them to look like they have a glaze on them. Served best with a warm wet wash cloth along with your napkin.
These guys can be pretty darn spicy, or not quite so hot if you use less Jalapenos. You can substitute Green Chilis for a bit of a change; that version is not as hot. You will have a lot of sauce just sitting there in the pot when you are done. Save it in the freezer and use it later with pork chops or ribs.
The amounts shown above feed 4 or 5. Reducing by half works too.
