How does waking up to a wonderful aroma and breakfast already cooked sound? This is one to use at least once a week, especially in the cooler months! It makes breakfast a lot easier. You use your crock-pot and put it together the night before. It does probably require a trip to the health food store, but don’t let that scare you cost-wise because this is definitely inexpensive per serving. Especially when you consider the nutritional value.
Crock-Pot Millet Hot Cereal
In case you are not familiar, millet is a ancient grain (gluten-free) that is packed with nutrition. You get lots of protein and fiber, and your body will like it better than wheat for digestion.
You will also need Flax Seeds.
I use the brown ones. They contain omega-3 fatty acids and fiber, just to name some of the nutritional value.
In order to receive the full benefit, you need to chop them finer in a blender. This allows your body to take advantage of all the nutrients. If you don’t do this, they still taste good, but they sort of just pass through the digestion system.
Okay, so here is what you need:
1 cup millet, rinsed
1/2 cup flax seeds
7 cups water
3/4 cup slivered almonds
1/3 cup real maple syrup
2 tsp cinnamon
You want to allow at least 8 hours so plan accordingly the night before. To morph the water into almond milk, put both the water and the almonds in a blender. I do it about 2 or 3 cups at a time with all the almonds in from the beginning. Some of the almonds will not puree down, but that is okay. You want to pour all 7 cups worth into crock pot. Add the cinnamon and syrup. Then add the rinsed millet and the chopped flax seeds. Stir it up and cook on low heat all night.
You might need to add a small amount of water in the morning if you want it a little thinner. However, if you add some milk and a little more syrup (or honey) that thins it out as well.
This recipe gives you about 6 large servings. It is very easy to adjust amounts for more or less. Kids love it, and the whole family will enjoy the wonderful smell.
