Here is a great new recipe for you! Enjoy Stuffed Flank Steak Simmered in Beer! This is a great dinner.
The amounts shown here feed four, so it also works for just a nice family dinner, or dinner for two with leftovers for the next night.
Stuffed Flank Steak Recipe
What you need:
1 1/2 lbs flank steak, tenderized
10-12 oz of beer (non-alcoholic works too)
1 box stove top stuffing
2 stalks celery, chopped
3/4 grated or shaved Parmesan cheese
2 cloves garlic, chopped
Salt and pepper
Have your butcher run the steak through a tenderizer, unless you have one or want to pound the meat out flatter. Make your favorite stuffing, either the boxed kind or one you like. I used a stove top variety here, but added the chopped celery as it was cooking. Lay out the meat on flat service and spread it out as evenly as possible. Coat it with your cooked stuffing, and then sprinkle the Parmesan cheese over the top. Season with salt and pepper.
Roll it up as tightly as you can without squeezing out the stuffing. Use several toothpicks to secure it. Stick pieces of garlic around the outside surface. Place it in a 10 or 12 inch pan, and cover with beer. You want it to sit in 3/4 to 1 inch of liquid. Heat it to a low boil and then simmer, covered for about 4 hours. Check on it often to baste with the liquid and to make sure the tooth picks are holding. It is okay to add more toothpicks.
This one works well with a salad or sauteed veggie. Make sure to remind everyone to remove the toothpicks. If you want to experiment, you can stuff with rice or try with different cheeses. No matter what you choose it makes for a delightful entree.
