I decided to try a Boboli Pizza Crust. I chose the thin crust. What an easy way to have a pizza night, and give people choices. There are unlimited creations you can put together. I checked out their website and even found a S’mores recipe! The kids would love that one – oh, wait a minute, maybe I would too.
Here’s what you need for my Mediterranean version shown above:
1 Boboli Thin Pizza Crust
3 tablespoons olive oil
1/2 medium onion, sliced thin
1 cup mozzarella cheese
1/2 cup crumbled feta cheese
1/2 cup chopped kalamata olives (black olives work too)
12-15 cherry tomatoes, halved
2 large mushrooms, chopped
1 cup chopped fresh spinach
Thyme
Using 2 tablespoons of the olive oil, saute the onions until caramelized. Add the spinach and mushrooms and continue heating for 10 minutes on medium, adding in the tomatoes the last 4 or 5 minutes.
Brush the Boboli crust with 1 tablespoon olive oil and top with 3/4 cup mozzarella cheese. Top with the sauteed mixture, sprinkle on your olives and top with the remainder of the mozzarella and the feta cheese. Finish it off with a showering of thyme. Bake at 425 for about 10 minutes on a cookie sheet or pizza stone. If you want it crispier set it directly on the oven rack.
I also created another version that was really good. Pizza sauce, chopped pineapple, chopped ham, green chili and pizza cheese are all you need.
As you can see, the possibilities are endless, and the kids can even make their own. Let me know if you try the S’mores version before I do. It looks pretty inviting to me.
