Here is a tasty one for you! I can always use more chicken recipes to try and this is a great one.
All you need is…
1 cup fresh orange juice (from about 3 oranges)
2 tablespoons grated orange zest (from about 2 oranges)
6 cloves garlic, minced
1/4 cup soy sauce
1 tablespoon brown sugar
1 teaspoons salt
1/2 teaspoon fresh-ground black pepper
1 cut up fryer or your choice of chicken pieces
Heat the oven to 400 degrees F. In a large bowl, combine the orange juice with the orange zest, garlic, soy sauce, brown sugar, salt, and pepper. Add the chicken and toss to coat. (You can marinade for an hour or so if desired)
Arrange chicken in a large baking dish.
Reserve 1/4 cup of the orange mixture and spoon the rest of the mixture over the chicken. Bake for 25 minutes. Turn the chicken over and baste with the reserved orange mixture. Cook until just done, about 25 minutes longer.
Add some potatoes or rice, and a salad. The orange flavor really stands out.
