I think the best dinner is the all-in-one kind, especially if it ends up being like a Sunday dinner any night. I love Cornish Game Hens, and because they are great with rice I have managed to put it all together…. the meat, the rice and the veggies.
Here are the ingredients:
2 hens
2/3 stick of butter
1 pkg Zatarain Wild Brown Rice
1 and 3/4 cup water or broth (or a little of each)
1 cup brocolli florets
2 or 3 mushrooms
Lemon pepper
Prepare the rice per the package instructions, except you can use a combination of broth and water, or either for the liquid. I use butter just a little bit of butter for the oil. Keep in mind you can also use your own rice recipe, just as long as you end up with about 4 servings. While the rice is cooking, steam your broccoli florets until they are almost tender, and chop up the mushrooms. When the rice is done add the broccoli and mushrooms and fluff it. This will all take about 45 minutes total.
Preheat the oven to 400 degrees.
Stuff the hens with rice mixture. Place them breast up on a rack in a baking pan. Season with lemon pepper and brush the outside with melted butter. Keep the remaining rice warm to have for later, or you could also stuff one more hen it you want.
Cover the pan and cook for 30 minutes. Uncover and cook for an hour more until they are no longer pink.
Cut each hen in half for a serving!
