Sometimes things are definitely worth repeating. You probably notice when I see a good deal I want to make sure you see it. Same goes with recipes. I want to make sure everyone gets this one I posted last summer because it is so yummy, and it is another all-in-one meal. You can almost just serve it up solo like a big bowl of soup.
Here is what you need:
1 lb large shrimp, fresh or frozen
Half lb broccoli or asparagus
15 -20 cherry tomatoes, cut in half or 1 large tomato chopped
4 or 5 fresh basil leaves, chopped finely
8 oz cooked penne pasta
Quarter cup chicken broth
2 large cloves garlic, minced
Salt and pepper
Parmesan cheese
Boil shrimp until pink, and then peel. Using a large skillet, saute garlic and shrimp briefly. Add your green veggie, pasta and chicken broth along with the basil, salt and pepper, and cover to heat. When it is heated throughout add the tomatoes until hot as well. Top it with grated Parmesan cheese.
