Ready for a seriously delicious and EASY recipe?!! You have to try these easy Pecan Pie Mini Cupcakes! Someone shared this one with me on Facebook and I made them yesterday — SO GOOD!
They are not too sweet, just the right size to satisfy a sweet tooth and seriously delicious! I was very surprised at how light and tasty they were. (Yes, I need to get better at pictures, this picture really doesn’t do them justice at all!)
Oh and did I mention EASY?! Very simple to make.
All you need:
1 cup chopped pecans
1/2 cup all-purpose flour
1 cup packed brown sugar
2/3 cup butter, melted
2 eggs
Makes 24 Mini Pecan Pie Cupcakes
Directions:
1. Preheat oven to 350 degrees.
2. Combine ALL ingredients and stir well.
3. Spray a mini muffin tin with non-stick cooking spray.
4. Fill each about 3/4 full.
5. Bake for 18 minutes
Enjoy!! I recommend letting them cool for a couple minutes in the pan and then transferring onto a rack so that they don’t stick in the muffin pan.
