The temperatures are cooling down with Fall here, and at my house, that means turning the stove on more often. Thank goodness! Here is an easy casserole that is great for the family or to take to a potluck. If you make too much you can eat it for lunch the next day or even freeze it.
Here is what you need for 8 to 10 servings:
2 lbs ground beef
1 lb of bacon
16 oz uncooked pasta
1 onion, chopped finely (leave them out if you like your burgers without them)
2 large cloves of garlic, minced
2 cans of tomato soup
1/2 cup ketchup
1 tsp salt
1/2 tsp pepper
1 tsp herbs (basil, oregano and marjoram…or substitutions)
2 cups shredded cheddar cheese
Ingredients can easily be cut in half for less.
In a large skillet, cook bacon until crisp. Remove from the pan and let it drain for future crumbling. Using the same skillet with the bacon drippings, cook the ground beef,onions and garlic until the beef is browned and the garlic and onions are tender. Add in your herbs, salt and pepper. Crumble the bacon and add it to mixture, followed by the ketchup and soup. Heat it up and let it simmer while you prepare the pasta according to package instructions. I used the bowtie variety. When it is tender, drain it and stir into the skillet along with about half of the cheese. Stir it up to melt the cheese, and then sprinkle the remainder on top before serving.
I added a salad and some warm french bread. It really does taste like a bacon cheeseburger!
