Yes, you read that right!! Snickerdoodle MUFFINS! I don’t know about you, but I love me some good Snickerdoodles, especially when made right and they are nice and soft! So a Snickerdoodle Muffin is a sure hit in our house. Hope you enjoy it too!
Snickerdoodle Muffins
Lightly sweetened and very light and airy these muffins are a delicious start to the day or a great ending, perfect with a cup of coffee. These are a great recipe to have your kids help you with so you get a little quality time and a yummy snack out of the deal.
What you need:
2 ½ cups all-purpose flour
1 tsp. baking soda
½ tsp. salt
2 tsp. cream of tarter
3/4 cup sugar
1 tsp. ground cinnamon
1 stick of butter, softened
1 cup half and half
2 eggs
2 tsp. vanilla
For topping:
Melt 1 Tbsp. butter
Stir in 1 ½ tsp. cinnamon and 1 ½ tsp. sugar
Directions:
With a hand or stand mixer, cream butter and sugar together.
Mix in vanilla and half and half.
Add eggs, one at a time, mixing well between each addition.
In separate bowl combine flour, baking soda, cream of tartar, cinnamon, and salt.
Add dry ingredients to wet ingredients a little at a time until thoroughly combined.
Spoon batter into a muffin tin that has been lined with cupcake wrappers, or sprayed with nonstick cooking spray. I used a ¼ measuring cup, to fill each of mine, which worked out perfectly, the muffins swelled a little over the cups and gave them delicious crunchy edges.
Using a ¼ measuring cup I was able to make 16 large muffins.
Drizzle topping over each muffin before baking.
Bake in an oven preheated to 400° for 15-20 minutes, until tops are golden brown and toothpick comes out clean.
