My grandma was not fond of lasagna, but she liked tofu, and she liked this version. Because of that, we referred to it as Italian Tofu Casserole. However, the sneaky part has to do with the fact that most people do not even notice the tofu, so you can probably sneak this one by them. If you have never used Myzithra cheese, here is your chance. It is a great cheese to have on hand for any dish you grate cheese on top of.

Sneaky Tofu Lasagna
What you need:
1 package lasagna noodles
1 pkg firm tofu
1 and 1/2 lbs ground sirloin
3 to 4 oz Myzithra cheese, grated
12 oz Feta cheese, crumbled
32 to 40 oz of crushed tomatoes, canned
4 large garlic cloves, chopped finely
1 medium onion, chopped
Olive oil
Basil
Oregano
How to make Sneaky Tofu Lasagna:
When I make the sauce, I like to make extra. It freezes well and can be used for a quick pasta dish later. You can also vary it to your liking. I usually take 2 large cans of crushed tomatoes and blend them with water to equal about 2 quarts. Saute the garlic and onion in olive oil until tender. Brown the beef…you can use the same pan… and then drain. Add the tomato mixture and herbs.I have a large pan that I can use for all of the sauteing and browning, which saves on the clean up.
If you use fresh basil and oregano, you probably want about 1/4 cup for each. If you use dry, cut it back to about a tablespoon for each. Bring the whole mixture to a boil, and immediately lower to a simmer to heat for at least 30 minutes.
Using a lasagna pan or a 13″ by 9″ cover the bottom with a thin layer of your sauce. Put a layer of the uncooked pasta on that, followed by a layer of tofu sliced thin. Cover with a generous helping of sauce. Then, another layer of noodles, topped with all the Feta cheese and another helping of sauce. Sprinkle all the Myzithra cheese on the top. You will likely have leftover sauce, so freeze it for quick meal down the road. Cover carefully with foil and bake at 350 for one hour. Let it set a bit without the foil for about 15 minutes when out of the oven.
Add a salad and garlic bread, and enjoy. Variations are easy with this recipe, just don’t change the cheese or the tofu.
