While shopping last time, I picked up one of the McCormick Recipe Inspirations. If you are not familiar with them, they consist of all the herbs and spices that are needed for a specific dish. It is really nice to have all the stuff without having to take inventory in the spice cupboard.
I already have a recipe I use for Almond Crusted Tilapia, so I thought I would experiment and improvise just a bit, especially since I did not have all the ingredients listed on the nice little recipe card that comes with the package. I will have to try that one next time. The card on the package called for diced bell pepper and chopped spinach. I did not use either, but I kept with the instructions otherwise. I did add finely chopped almonds taken from my original recipe. You can follow the package recipe or try mine.
Mine:
1 and 1/2 lbs tilapia fillets
1/2 tsp salt
1/3 cup butter melted, or olive oil
3/4 cup fine bread crumbs
1/4 cup finely chopped almonds
3 tbsp Parmesan cheese
Place fish on foil-lined shallow baking dish. Sprinkle with salt. Mix butter and all of the spices from McCormick package in a bowl. Brush the fish with 1 tbsp of the seasoned butter.Stir the remaining butter into the bread crumb mixed with the cheese and almonds. Top the fillets evenly with this mixture, pressing them lightly to coat.
Bake in preheated 400 degree oven for 15 minutes.
I served mine with rice and avocado slices, but your favorite side will work. The little inspiration package from McCormick made this really fast, and my improvisation was successful. Either version is speedy and delicious I am sure.
By the way, from beginning to end this took about 30 minutes total.
