When I was growing up, if you were to have asked me what my favorite food was it would have been strawberries. And if you asked me what my favorite candy was… BUTTERSCOTCH. I loved those little butterscotch candies (as terrible as they are for teeth!). Still, to this day, anything with butterscotch flavor is a favorite for me. So Butterscotch + French toast = sure winner in my books! Nice thing with this french toast is that it is baked and very simple to make!

Baked Butterscotch French Toast
(Recipe makes 8 Mini Loaves)
What you need:
8 cups cubed bread (best with a french bread loaf)
2/3 cup white sugar
7 eggs whipped
1 stick melted butter
1 1/2 cups whole milk
1 box (3.2oz) Jello Cook and Serve Butterscotch Pudding
1 cup chopped pecans
How to make Baked Butterscotch French Toast:
Cube your french bread and dump that and the nuts into a large bowl.
Mix the melted butter, sugar, pudding mix, and milk together in a small bowl stirring until blended well. Whip up your eggs in a separate bowl and once whipped, add to the mix.
Pour this mixture over the cubed bread and nuts. Mix it so that all of the bread is well coated. Let the mixture sit for 10-15 minutes to give the bread time to soak up the egg mix.
Put into a mini loaf pan, or cupcake tin (make sure you coat with non stick spray).
Bake at 350 degrees for 30-35 mins until golden brown.
Top with your favorite toppings and enjoy!
