One of my favorite things about Spring and Summer is all of the fruit that is available again! Blueberries being one of those. Cheesecake + fruit = deeeeeliciousness! Here is a great recipe to make individual Blueberry Cheescake in a Jar.

Blueberry Cheesecake in a Jar
What you need:
¾ cup sugar
3 packages of cream cheese, any brand – softened
1 tsp. Vanilla extract
3 eggs
2 C. fresh blueberries
24 jelly jars (4 oz.)
Crust –
1 C. of graham crackers, crushed
2 tbs. sugar
3 tbs. butter or margarine, melted
How to make Blueberry Cheesecake in a Jar:
Preheat the oven to 325 degrees
Combine the melted butter and your 2 C. of graham cracker crumbs. Press about 2 tbs. of the mixture into the bottom of your 24 jelly jars.
In a medium size bowl combine the softened cream cheese, ¾ C. sugar and vanilla. Blend with a mixer. Add each egg one at a time blending well on low speed.
Bake 25-30 minutes. Centers will set. Cool and refrigerate completely.
Add your fresh blueberries on top right before serving.
Enjoy!
*Makes approximately 24 servings. 1 jar = 1 serving. Store in the refrigerator with the lids on up to 1 week.
