No chocolate in this fudge! It only resembles fudge because you cut it into little squares. Served with chips it makes a great snack or appetizer, especially at a potluck or holiday gathering. You can’t mess it up even if you try. And you can improvise with your own choice of salsa. Along with the salsa all you need is eggs and grated cheese.
Here is what you need to make a large 9 by 13 batch:
6 eggs
4 cups grated Cheese
6 -8 oz of salsa, Mrs. Renfro’s Green works great!
Cover the bottom of the 9 by 13 pan with 2 cups of cheese. Add the salsa to a bowl containing the beaten eggs, and mix thoroughly. Spread the mixture over the layer of cheese.
Sprinkle the remaining cheese over the top. Bake in a preheated oven at 350 for 25 to 30 minutes until eggs are set. Let it cool for about 10 minutes, and cut into small squares to serve. I usually put it on a plate with chips. Guacamole is also a great addition. It always disappears fast, so make a lot! And if you want to make a smaller portion, it works to cut back 40 or 50 per cent on the ingredients and use a smaller pan.
I have tried this with different salsas and various size pans. You really can’t botch it!
