Well, this dish is one I cannot believe passed me by before. I love that you can put so many different ingredients in it. It would be so easy to prepare even the night before and cook the next day. We ate it for two dinners. If you have many to feed or want it for more meals, expanding it would be easy, as long as your slow-cooker is big enough.
Ingredients:
1 1/2 lb. hamburger
1 large clove of garlic, chopped
1/2- 1 tsp. thyme
6 medium potatoes, cut into serving size chunks (I used red and did not peel)
2 celery stalks, chopped
1 cup of frozen corn
1 large onion (optional)
1 can cream of mushroom soup
3/4 cup water
Salt and pepper
Brown the ground beef and garlic until just cooked, seasoning with salt, pepper and thyme to your tastes. Drain and set aside.
Prepare the veggies.
Put 1/2 of the cut up veggies into a buttered crock pot. Add browned beef and top with remaining vegetables. Mix mushroom soup with water and spread over top of contents.
Cover and cook on low for 8 to 10 hours or on high for 3 to 4 hours.
It was great with a roll and some fruit. Next time I might add some carrots or bell pepper. You can gear your version to what you have in the fridge or what sounds good to you.
