This is one of the EASIEST meals you can make, sometimes I like the all-in-one meal idea, it definitely makes cooking a lot easier! This Easy Chicken and Veggie Casserole was no exception. You can obviously play around with what veggies you include, but we made it with fresh green beans and it was great!
Easy Chicken and Veggie Casserole
What you need:
3 chicken breasts, cut in half
5 or 6 red skin potatoes, quartered
10 oz fresh green beans, broken in half
Zesty Italian Dressing
One stick of butter
How to make Easy Chicken and Veggie Casserole:
With each of the main ingredients, I coated them with the salad dressing before I placed them in the pan. Using a 9 x 13 dish place the chicken lengthwise down the center. Add the potatoes to one side and the beans on the other. Sprinkle all of it with Italian seasoning, and then garlic powder. Melt the butter and drizzle over the whole mixture.
Cover with aluminum foil and bake at 350 for at least one hour. You can take the foil off for the last 15 minutes. I actually cooked mine for almost 90 minutes. It is either my oven or the fact that I am a mile high. You will be able to tell how long depending on your situation. I served mine with some French bread. The kids loved it too.
