So, I have been digging around in grandma’s recipe stuff again. I found this one, which was emailed from one of her online friends back in 2001. If your house is like mine, chicken strips or nuggets will always get eaten, even if they are cold, so I thought I would try it. One thing is for sure; it was super easy. And, I am always looking for something to do with chicken breasts.
Ingredients:
3 chicken breasts (that means supplied by 1 and 1/2 chickens, just to be clear)
2/3 c crushed stuffing mix
1/2 cup grated Parmesan cheese
1 teaspoon Italian herbs
3 tablespoons melted butter infused with a minced clove of garlic
Preheat your oven to 350. Cut each breast into 3 equal parts. Mix the crumbs, cheese and herb together in a bowl. Brush each piece of chicken with the garlic butter and roll each in crumb mixture. Place on baking sheet and bake for about 45 to 50 minutes.
We ate ours with a bean dish and some rolls. I like the coating, but next time I think I will marinated them a bit in Italian dressing. Breasts never seem moist enough for me. They would be good chopped up on a salad with honey mustard dressing. I do have an idea for using them in a casserole. I will share with you soon how it works out. I will say they were very easy to make, not much time needed for prep or cooking. It’s fun trying things in grandma’s stash. I never know what to expect.
