I am always on the look-out for new and tasty breakfast ideas. Personally, I am not a big fan of pancakes but I LOVE French Toast and Waffles. This recipe here is a bit of a mix of both of them! And a healthy one too!
Egg free Waffled French toast
2 cups almond milk
1 teaspoon pure vanilla extract
4-8 thick slices of a dense bread (we used a homemade egg & dairy free bread)
blueberries and bananas to top the waffles with
Turn your waffle iron on to just above medium low and grease liberally with coconut oil.
Pour the almond milk into a deep bowl or dish and let the pieces of bread soak it up.
When they are slightly swishy with liquid place them onto the griddles and lock the lid.
Let cook until the outsides are slightly crispy as a waffle would be.
The inside will hold onto some of the almond milk giving you that familiar custard texture.
Top them with fresh fruit, pure maple syrup or dust with cinnamon.
