I don’t know about you, but when it comes to breakfast, the simpler the better for me! Here is a fun and easy twist on your classic Eggs and hash browns. Eggs in a Basket! They are extremely easy to make and yet so good!

Eggs in a Basket; Easy Breakfast Recipe
What you need:
Regular size Muffin tin
12 eggs (or less)
Shredded Potatoes (I use the frozen ones)
Salt & Pepper to Taste
Green Chile (optional)
How to make Eggs in a Basket:
1. Preheat your oven to 400
2. Spray a 12 muffin tin with cooking spray thoroughly
3. Fill each hole up 3/4 full with shredded potatoes
4. Spray lightly a second time with more cooking spray
5. Cook the hash browns for 22-24 minutes
6. Remove from the oven and reduce the temp to 350.
7. Add green chile and then one egg on top of each of the “baskets”, season with salt and pepper. For me, the green chile is a MUST! Definitely adds that spicy bite to them!
8. Cook for 15 minutes.
Serve with toast and bacon or anything else you want to add! Enjoy!
