I found this one, handwritten, in a stash of recipes that belonged to my Grandma when she was alive. It is a great Company Casserole Recipe!
Don’t shy away from the longer list of ingredients. This really is a fantastic recipe for company, a potluck or just a family dinner.
Grandma’s Company Casserole Recipe
The stuff:
1 lb ground beef
1 medium onion, chopped
15 oz cream of mushroom soup
1 cup milk
3/4 cup sharp cheddar cheese, grated
1 small can sliced ripe olives
1 small container of green olives, sliced
1 can of mushrooms
1/2 cup mixed nuts, chopped into small pieces
8 oz egg noodles, cooked and drained
1 can chow mein noodles
Directions:
Cook the onion and meat together and drain. Combine with soup and milk. In a large, buttered, oven proof casserole, layer the ingredients in the following order:
- Noodles
- Meat/soup mixture
- Grated cheese
- Olives
- Mushrooms
- Mixed Nuts
Do the layering 2 times if possible.
Cover and bake for 50 minutes, adding the Chinese noodles the last 10 minutes with the cover off.
The combination of ingredients makes for a very interesting taste treat. I served mine with a fruit salad.
