Because it’s the weekend, and because it’s fall, and because you just might have some peaches hanging around, here is an extra recipe on Friday instead of Tuesday. Any excuse will do if you want to enjoy an easy treat.
Grilled Peaches with Ice Cream
All you need is:
Almost ripe or ripe peaches
2 tablespoons brown sugar
1/2 teaspoon cinnamon
A little bit of butter or oil
Your favorite vanilla ice cream or frozen yogurt
Heat up a grill type pan to med-high. If your peaches cut in half easily lengthwise and don’t cling to pit, that works. But, you can also use quarters if it works better. Spread the oil or butter on the open part and heat on the grill for 4 or 5 minutes until browned.
Add a little oil or butter to the opposite side and turn over. Have your brown sugar and cinnamon mixed together and be ready to sprinkle on the side that is grilled. Cover them and turn your heat off. In about 5 minutes the topping will be melted and the peaches heated.
Add to a bowl with ice cream. It almost tastes like peach cobbler, but it is so easy! Under 15 minutes from beginning to mouth.
