Vanilla Lime Cupcakes
What you need:
1 1/2 cups all-purpose flour
1 tsp. baking powder
Pinch of salt
1/2 heavy cream
1 teaspoon of lime extract
2 tbsp lime juice
1 tbsp lime zest
1 stick of butter, room temperature
1 cup sugar
3 Large Eggs
ICING MIX
1/2 cup of shortening
2 cups of powder sugar
1 tbsp of butter
3 Tbsps of lime juice (can add more lime if needed)
1 tbsp of lime zest
How to make Vanilla Lime Cupcakes:
First start by adding all your dry cake ingredients in a separate bowl ( four, baking powder, salt) Then set aside for later.
In your mixer add in your eggs, sugar, butter and whip until a creamy texture. Then add your lime juice, extract, heavy cream, and zest into the mix. Combine until it’s well mixed.
Slowly add in your dry mix until its all gone and smooth. Now pour into your cupcake liners and bake at 350 degrees for 30-45 minutes or until your toothpick comes out clean.
Once cupcakes are done, set aside and completely cool before icing.Get your shortening, powder sugar, butter and mix well until it is also a smooth texture. Then add in your lime juice and zest. Once it taste to your liking, set in the fridge until your ready to icing your cupcakes.
