This Veggie & Chicken Noodle soup recipe is the perfect lunch or dinner meal. Light and flavored with tons of fresh vegetables this also makes for a figure friendly meal, use whole wheat noodles to increase the health factor even more. Include any fresh vegetables that you have on hand in your soup- potatoes, corn, peas, onions, spinach, or green beans. Delicious and filling served on its own or as an accompaniment to a sandwich or salad for lunch or dinner.

Homestyle Veggie & Chicken Noodle Soup
Ingredients:
6 cups low sodium chicken broth
2 cups shredded or diced chicken
3 carrots
2 stalks celery
1 yellow squash
1 zucchini
2 cups uncooked egg noodles
2 cloves garlic, crushed
salt and pepper to taste
How to make Homestyle Veggie & Chicken Noodle Soup:
Dice squash, zucchini, carrots and celery into small bite sized pieces.
Pour broth into a pot over medium heat.
Add in; carrots, garlic, celery, egg noodles, salt and pepper-allow to simmer for 10 minutes.
Stir in chicken, squash and zucchini. Simmer an additional 10 minutes.
This soup also freezes well- allow soup to cool to room temperature and place in a freezer safe container, or bag. Label and place in freezer, thaw and reheat.
