When I think of Knorr Side Dishes, I usually don’t think you can turn it into a meal but you can! VERY easy and very inexpensive way to make a tasty dinner or hefty side dish.

CHEESY FIESTA CHICKEN
Prep 10 min | Cook 10 min | Serves 4
What you need:
- 1 package Knorr® Rice SidesTM – Chicken flavor
- 1 can (15.5 oz.) corn, drained
- 1 can (15.5 oz.) black beans, rinsed and drained
- 12 oz. thinly sliced boneless, skinless chicken breasts or 1 can (9.75 oz.) canned chicken, drained
- 2 slices American cheese or 1⁄2 cup shredded Monterey Jack cheese (I used the Mexican Blend shredded cheese)
1. Prepare Knorr® Rice SidesTM – Chicken flavor according to package directions, stirring in corn and beans during last 2 minutes of cook time.
2. Meanwhile, heat a small amount of oil in a large nonstick skillet over medium-high heat and cook sliced chicken, stirring frequently, until chicken is thoroughly cooked, about 4 minutes. Stir into cooked rice mixture.
3. Stir cheese into rice mixture and serve.
It definitely passed the taste test in our house!! Quite yummy! Only comment my hubby made about it was that it would taste even better with some green chile 😉

We tend to eat a lot of one-pot meals… rice casserole, pasta dinners, and such. I don’t normally make a “side” dish, unless you count garlic bread or french fries.
Corn casserole is one of my favorite side dishes.
