These Lasagna Rolls are hands down my family’s favorite “freezer meal” in our monthly rotation. Its relatively simple to make, filling, and is easy to serve straight from the oven in the individual portions I made it in. Serve it with a side salad and garlic bread and you have a delicious filling meal worthy of a Sunday Night family dinner or a busy weeknight meal.

You can lighten it up if you prefer by using cottage cheese in place of Ricotta, and ground chicken instead of ground beef. This is a great dish for doubling, then you are covered for nights out of the month, or it makes a great meal to take to an ailing friend or neighbor.
Lasagna Rolls Recipe
What you need:
½ lb. ground beef
8-10 lasagna noodles
2- 21/2 cups of Ricotta
1-8 oz. bag shredded Mozzarella
½ cup grated Parmesan
1 jar Spaghetti sauce
1 large egg
1 tsp. dried Rosemary
1 tsp. dried Oregano
1 tsp. dried Basil
1 tsp. garlic salt
How to make Lasagna Rolls:
Brown ground beef, finely crumbling as you cook with the spatula, drain and set aside.
Boil lasagna noodles according to package directions, drain, and cool by running cold water over them in the strainer, set aside.
Pour about 1/3 of Spaghetti sauce into the bottom of a freezer safe pan.
Combine remaining Spaghetti sauce with ground beef.
In a medium sized bowl combine; Ricotta, half the Mozzarella, grated Parmesan, egg, Rosemary, Oregano, Basil, and Garlic salt.
Lay out Lasagna noodles, spread and evenly distribute Ricotta filling over noodles.
Roll noodles starting at the end nearest to you, tucking in as you go.
Place rolls inside pan on top of sauce.
Pour remaining sauce on roll ups to completely cover (this will keep noodles from becoming crisp during cooking time).
Sprinkle remaining cheese over your Lasagna Rolls.
From here you can either place right into freezer, or bake, cool and then freeze. Either way cooking time will be approximately 45-60 minutes at 350°. Cover pan with aluminum foil for the first 45 minutes, remove foil and bake and additional 25-30 minutes, until heated through and cheese is melted and bubbly.
I like to use the disposable aluminum pans with the plastic lids. Take a sharpie and write cooking directions on top.
