So here is some good comfort food that works anytime of day. I usually use it for dinner and have some left for a breakfast or brunch. Not sure what to call it, so I often refer to it as “soul food.” Excuse the lack of specificity in terms of the amounts, because it almost doesn’t matter. I will give more instructions below about that.
What you need:
Eggs
1 pkg Jimmy Dean Sausage …I like the spicy one
3-6 potatoes depending on the size
Oil
Salt and pepper
Brown the sausage earlier and drain. You can even use what’s left in the fry pan instead of oil to cook the potatoes. Slice your potatoes to fry and heat them up until tender…usually about an hour. Mix in the sausage and continue heating.At this point, depending on the amount of people you are feeding, or if you want leftovers, you can divide the mixture or not. Often, I take about half out and save for another meal before adding the eggs. That way it keeps fresh.
If you are feeding several, you can just add the eggs. Right before you want to serve, beat up 4 to 10 eggs, determined by how many people, and add to the mix. Cook until just done…not any longer.
For dinner, serve with cornbread. Pancakes work well in the morning. You really can’t booboo on this one.
