I have been to Outback Steakhouse in several different cities, but I definitely think Albuquerque has a good one. Their Alice Springs Chicken is very good and I have put together a copycat recipe that you can enjoy at home! The result was another idea for chicken breasts, and I love it when they turn out moist.
Here is what you need for 4 or 5 people:
4 boneless, skinless breasts – I pound them down to about 1/2 inch and often slice the thicker parts in half horizontally
Seasoning salt
1 cup sliced fresh mushrooms
5 -6 bacon slices
1 cup shredded Colby/Jack cheese
Honey Mustard:
1/3 cup regular mustard
1/3 cup honey
2 tbls mayo
2 tsp dried onion flakes
Step by step directions:
1) Sprinkle all sides of each chicken piece with seasoning salt, cover and set aside in fridge for about 30 minutes.
2) Cook bacon in a large skillet until crisp. Set the bacon aside, but don’t discard the grease.
3) Saute the chicken over medium high heat in the bacon grease for about 4 or 5 minutes on each side.
4) Place sauteed chicken in a 9 x 13 casserole dish or pan.
5) In small bowl mix together the mustard, honey, mayo and onion flakes.
6) Crumble the bacon.
7) Spread honey mustard over the chicken, and then layer with the mushrooms, bacon and shredded cheese
8) Bake uncovered in a 350 preheated oven for about 30 minutes.
Good enough for company or your family. Serve with your favorite veggie or salad.
