Peanut Butter Bars with Brownie Fudge Frosting
Bar Ingredients:
1 pouch Betty Crocker peanut butter cookie mix
3 tablespoons oil
1 tablespoon water
1 egg
Frosting Ingredients:
8oz (1 stick) butter, softened
1 ½ tablespoons cocoa powder
2 cups powdered sugar
¼ cup boxed brownie mix
2 tablespoons heavy cream (or milk)
Sprinkles
Directions:
Preheat oven to 350-degrees. Grease a 9×9 pan and set aside.
In a large bowl, combine the cookie mix, oil, water and egg until the dough is soft. Press the dough into the pan, using another piece of parchment paper to help you press it into the corners.
Bake for 15-18 minutes or until the edges are golden brown. Set on a wire rack to cool for 10-15 minutes.
While you wait, prepare the frosting. Beat the butter until smooth and creamy. Gently stir in the dry ingredients, and add the heavy cream. (You can use milk if you don’t have the cream – it will make it a little less rich). When the frosting is thoroughly combined, set it aside until the bars completely cool.
Frost the cooled peanut butter bars, then sprinkle with mini chocolate chips and festive sprinkles. Refrigerate for 30 minutes before cutting into squares. Store leftovers in an airtight container in the refrigerator for 5-7 days.
Makes about 12 medium bars.
