Here is a bit of a “cheat” recipe, it is using packaged stuff, but with St. Patrick’s Day coming up this is a fun mixture to add something new to plain old cupcakes. Try these new St. Patrick’s Day Surprise Cupcakes.

St. Patrick’s Day Surprise Cupcakes
What you need:
1 Box of white cake mix
1 Container of whipped white frosting
1 Package of green Wilton Colorburst Batter Bits
1 Container Wilton St. Patrick’s Day Sprinkles
Instructions:
Step 1: Preheat your oven to the temperature on your box of cake mix.
Step 2: Prepare the cake mix batter according to the directions on the box. Preheat your oven to the temperature on your box of mix.
Step 3: Add as few or as many green Wilton Colorburst batter bits to your cake mix batter as you like. We used about half of a package.
Step 4: Place cupcake liners into a cupcake pan, and fill them about ¾ of the way full with batter and bake according to the package instructions.
Step 5: Pull the cupcakes out of the oven and let them cool.
Step 6: When completely cooled down, ice the cupcakes. We used a starburst icing decorating tip placed in the corner of a zip lock bag to apply the icing, but you can just spread it on with a knife or spatula if you prefer.
Step 7: Sprinkle on some Wilton St. Patrick’s Day sprinkles and enjoy.
