I am so ready for Summer!! (Although, I say that now… I am sure in 6-8 weeks I will be begging for cooler weather again…). Some of you may remember my recipe from last year for Orange Creamsicles, those are probably my favorite when it comes to a summertime treat. But this one comes pretty close too! Strawberry Shortcake Popsicles. Not only delicious, but on the healthier side too!

Strawberry Shortcake Popsicles
(Recipe makes 10-12 popsicles)
What you need:
2 cups of fresh Strawberries
1/2 cup crushed Vanilla Wafers
2 cups Vanilla Yogurt (You could use greek yogurt too!)
1/2 cup Honey
How to make Strawberry Shortcake Popsicles
Combine the vanilla wafers, yogurt, and honey. Crush and mix well.
Wash and trim your strawberries, puree in food processor. Or if you don’t have one toss in the blender on “pulse” until pureed.
Use popsicle molds or small paper cups and popsicle sticks as molds.
Alternate layers of yogurt mix and strawberries in the molds.
Insert sticks and freeze several hours (overnight if possible!)
To release the pops set out for 10 minutes or run under warm water for a few seconds.
