Pull out that zucchini!! Here is a seriously tasty recipe for Zucchini Bread you need to try!! You will definitely want to make 2 loaves.
Bread Ingredients (2 loaves):
1 cup oil 3 eggs
2 cups sugar 3 cups flour
1 tsp salt 2 tsp baking soda
1/2 tsp baking powder 1 1/2 tsp cinnamon
1/2 tsp nutmeg 1 cup crushed Dole pineapple and juice
2 tsp vanilla 2 tsp vanilla
2 cups zucchini – chopped 1 cup nuts
Glaze:
1/2 cup powdered sugar
1 tsp corn syrup
1/4 tsp cinnamon
1 tbs pineapple juice
Combine oil, sugar and eggs and beat until sugar is dissolved. Add dry ingredients to the beaten mixture. Then add in pineapple, vanilla, zucchini, nuts and raisins, and mix up well. Pour into 2 greased loaf pans. Bake for 1 hour at 350.
For the glaze, simply combine the ingredients and mix until smooth. Let the bread sit for about 5 minutes when done, and spread glaze over top of loaves while still warm. Tastes great when warm, and it is wonderful for breakfast.
Try not to eat a whole loaf by yourself!
