Got leftovers?
Using leftovers can definitely become an art. Here is a great example of that, using leftovers from a typical chicken and mashed potato dinner. Keep in mind, however, it also works if you want to whip it up from scratch just because it sounds good.
Here’s what you need:
2 cups diced chicken
2 cups fresh spinach
10/12 fresh mushrooms (sliced)
1 can cream of mushroom soup
¼ to ½ cup white wine (milk or chicken broth may be used)
Leftover garlic mashed potatoes (approximately 1 ½ to 2 cups)
Salt and pepper to taste
Using an 8×8 baking dish, mix all the ingredients except the mashed potatoes. Flatten the potatoes to fit on the top and bake at 350 degrees for 30 to 45 minutes, or until bubbly.
This dish will serve 3 or 4.
If you do not have the leftovers, you can cook up some chicken breasts that are coated with your favorite coating, and cut up into small pieces. One of the pre-made mashed potato containers from the refrigerated section works great. There you are! Meat, potatoes and greens all wrapped up in a nice package. Serve with some chilled watermelon and you have your fruit serving as well.
