Uggie’s Smashy Yamapinos!
Try saying that name 5 times! If you read my Tasty Tuesday recipes, you might know that Uggie is my uncle who likes to cook. This is a fun recipe that gives extra flair to yams or sweet potatoes. Often what we get here when shopping are really the latter, but please give a little leeway to our name – yams fit best for that fun. This is a great alternative to rice or plain old potatoes.
What you need:
2 large sweet potatoes or yams
2 tablespoons butter or margarine
2 or 3 whole Jalapeno peppers, chopped (use fresh)
1 tablespoon milk
salt and pepper
Cube your potatoes and steam them until fork tender, probably about 20 minutes. Add your butter and milk, and mash with a potato masher. Blend in your chopped peppers and continue to mash until completely mixed, adding your desired amount of salt and pepper.
They are ready to serve, and taste great with ribs and coleslaw or salad.
Did you know that sweet potatoes are very nutritious? They are members of the Morning glory family, and are not even related to yams, or to potatoes either. A real yam is whiter inside and has a dark skin. It is likely that most of us have never eaten a yam, only sweet potatoes. The names became interchangeable when African slaves called them “yams” because they looked similar to the yams they were familiar with that are grown in Africa.
That means our name will work, and it sounds a lot better than Uggie’s Smashy Sweet Potatopinos. Until now, I doubt if either will provide results through your favorite search engine.
