Ready for some serious yumminess?! White Chicken Green Chile Enchiladas! These things are seriously tasty and very easy to make. Best with fresh Green Chile but if you don’t have access to that the canned green chile works too!
Green Chile Chicken Enchiladas with White Sauce
What you need:
2 Cups Shredded chicken
2 Cups Monterrey Jack Cheese (shredded)
3 Tbsp Butter
3 Tbsp Flour
2 Cups Chicken Broth
1 Cup Sour Cream
1 4oz can of Green Chile (or fresh Green Chile if you have access to it!)
8 Flour or Corn tortillas
Directions:
Preheat oven to 425 and lightly grease a 9×13 baking dish
Mix the Chicken and 1 cup of the shredded cheese together
Evenly distribute the chicken/cheese mixture between the tortillas and roll them up. Place them (seam down) in the baking dish).
Melt the butter in a large sauce pan over medium heat. Add in the flour and mix for about a minute until light brown.
Add in the chicken broth and whisk until smooth. Allow to cook over medium heat for a couple minutes until bubbly and thickened.
Add in the sour cream + the green chile and stir well.
Pour the mixture evenly over the enchiladas.
Top with the other cup of monterrey jack.
Put it in the oven for 20-25 minutes until golden!
