Here is the perfect solution for those times when you want a side dish that is quick and easy. Rice a Roni does not have to come ready made in a box. You can make your own, and even get creative. That’s what I did, and it turned out yummy.
Here is what I used, but feel free to improvise if your kitchen has something that seems to fit.
3/4 cup uncooked white rice
1/2 cup uncooked spaghetti, broken into 1 inch pieces
15 oz chicken broth
2 tbls butter or margarine
1/4 tsp garlic powder
1/2 tsp salt
2 small celery stalks. chopped
3/4 cup frozen corn
In a medium to large pan stir pasta pieces into melted butter. Stir constantly until spaghetti begins to brown. Add the celery and saute for a few minutes. Add the rice and stir until it is well coated. Pour in the broth and add the garlic and salt. Cover and simmer until all the liquid is absorbed, usually about 20-25 minutes. I added the corn after about 15 minutes, when most of the liquid was gone. Remove the lid and fluff it up.
Pretty sure you could add many other things, which means whatever you have in your fridge that seems appropriate. Beef broth would also work. Next time I think I will try chopped up broccoli and/or mushrooms. Let me know if you try a great variation.
