Left-over mashed potatoes anyone? It is especially easy to do at Thanksgiving when you have all those other items filling up your plate at the holiday meal. Once you enjoy some potato cakes the next day, you might find yourself mashing some potatoes specifically for this purpose. These taste really good for breakfast, brunch or dinner.
What you need for 10 to 12 cakes:
3 large eggs ,beaten
Half of a medium onion, chopped finely, (optional)
Butter
Flour
Salt and pepper
Combine all the ingredients except the flour and butter. Melt a couple tablespoons of butter in a large pan or griddle over medium heat. Form the potatoes into patties about 4 inches in diameter. Sprinkle a little bit of flour on the side that will hit the heat first. While they are cooking, sprinkle a little more flour on the side facing up.
Let them cook over med-high heat until a bit crispy before turning over. Adding a bit more butter to the pan when you flip them makes them even more brown and crispy. Sometimes I sprinkle a little grated cheddar cheese on the top at the end.
These taste great with sausage or bacon for breakfast. Serve with a hamburger patty and gravy for dinner. And, its a lot more fun than tossing them out because they are still left-over in the fridge.
