After being out of town for 8 days, I had a lot of grocery shopping to do yesterday! I restocked all the basics and got ready to make dinner last night only to realize that I forgot to buy Chili for my Frito Pie! So I whipped up a new Frito Pie recipe with what I had on hand and now I am glad I forgot to buy the Chili. It actually turned out better than any Frito Pie I had made with canned chili!
So time to share!
What you will need:
1lb Ground Beef
1 Bag of Fritos (I like the “Scoops”)
Garlic Salt
Seasoned Salt
Red Chile Powder
1 Can Rotel
1 12oz can of Tomato Sauce
1 can of Ranch Style Beans
Shredded Cheese
Directions:
1. Brown your ground beef in a deep skillet.
2. Once browned, add in the tomato sauce and can of Rotel.
3. Add seasoned salt and garlic salt to taste, I didn’t measure just sprinkled some of both over it all.
4. Add the can of Ranch beans, I drained the excess liquid off the top of the can before dumping it in.
5. Add 2 tablespoons of Red Chile Powder (or more if you like it HOT!)
6. Simmer for about 20 minutes.
7. Taste it and make sure you are seasoned as much as you would like!
8. Grate your Sharp Cheddar or you can use the bagged Mexican shredded cheese (which is what I did!).
9. Dump a handful of Fritos into a bowl, pour your mix over the chips and top with the cheese!
