Looking for a nice treat for Date night? Or Valentine’s Day? Here is a fantastic dessert for you, Apple Cobbler for Two. You don’t need to make a whole batch to enjoy the tastiness of this one!

Cinnamon Apple Cobbler for Two
Filling Ingredients:
2 medium apples, peeled, cored and chopped
¼ cup sugar
1 tablespoon cornstarch
1 teaspoon lemon juice
1 teaspoon apple pie spice mix
Biscuit Topping Ingredients:
3 tablespoons cold butter
¾ cup flour
1 teaspoon baking powder
1/3 cup buttermilk
Turbinado sugar for topping
Cinnamon for topping
Prepare the Filling:
Combine the apples, sugar, cornstarch, lemon juice and spice mix. Set aside while you make the biscuit topping.
Prepare the Topping:
In a bowl, whisk together the flour and baking powder. Cut the butter into small pieces and work it into the flour mixture using a pastry cutter.
Assemble and Bake:
Line a baking sheet with parchment paper and preheat the oven to 375-degrees. Divide the apple mixture between two pint sized mason jars. Divide the biscuit topping in half and arrange on top of the apple mixture. Sprinkle with the turbino sugar and cinnamon.
Bake for 25-30 minutes until the topping is golden brown and the apples are bubbly (they may run down the sides of the ramekin).
These are delicious with ice cream or homemade whipped cream and can be served warm or cold.

You could you would have extra and could make 4? You would just have to double up the topping mix to get 4. I would just play with it to fit what you need 🙂
