Who doesn’t love fried chicken, whether you serve it with a salad or baked beans in the summer, or with mashed potatoes and gravy in the winter. This recipe includes some marinating time, so it is good to get that part done early enough to let the chicken soak it up.

Delicious Oven Fried Chicken
Here’s what you need:
10 pieces of chicken – thighs are my favorite, if you use breasts cut into strips
8 oz sour cream
Half-cup Italian Salad Dressing
3 0r 4 cups crushed saltine cracker crumbs (can also use bread crumbs, pretzels, or a mixture)
Garlic powder, salt and pepper or Hot Salt
Butter or margarine
Earlier in the day, mix the sour cream, milk and salad dressing until blended. Take the skin off chicken pieces and remove any fat. Put chicken in a large bowl that you can cover tightly. Season the chicken with garlic powder, and then pour your mixture over the chicken. Cover and refrigerate for at least 2 hours, mixing a few times.
You can season your crumb mixture with anything you like. I like to add a little Hot Salt for a bit of spicy. I have also varied this mixture by using ground pecans and almonds. The nut version just costs a bit more. You can mix it all up too!
About 90 minutes before you want to serve, you can shake off the excess marinade and coat each piece with crumb mixture. Place on cookie sheet coated with olive oil or some of the butter or margarine. I have even used coconut oil. When they are all coated, put a thin pat of butter or margarine on each piece. Bake at 375 for about an hour. Yummy dinner, and great for leftovers cold too.
