When I first started making these, I wasn’t sure what to call them, they are kind of like a Millionaire bar but when I tasted them after they were done, I knew they had to be called Twix Cookie Bites, they taste almost just like a Twix bar! Quite tasty 😉  I’ve laid out the recipe below, definitely something that you want to do in “Bite-size” bits!

Twix Cookie Bites
What you need:
There are three layers to this
First layer in the Cookie Base:
1/2 cup of white sugar
2 Tbsp Brown Sugar
2 1/4 cups flour
1 cup Butter (I used salted)
For the Caramel filling:
1 can of sweetened condensed milk
1 stick (1/2 cup) Butter (again, I used salted)
1/2 cup Brown sugar
1 tsp Vanilla Extract
Chocolate topping:
2 cups of Milk Chocolate Chips, melted.
1/4 cup white chocolate melted for drizzle
How to make Twix Cookie Bites:
Preheat the oven to 325.
Spray a 9×13 baking pan with a cooking spray. Â I actually put foil in the bottom of my pan, made it easier to clean up.
Make your cookie base by melting your butter and mixing all of the ingredients together well until smooth. Â Press the dough in the bottom of the cake pan evenly.
Bake for 25 minutes until lightly browned. Â Remove from the oven and while cooling make your middle, caramel layer.
Get read for an arm work out! Â This one you have to stir for a good 20-25 minute continuously.
Mix the sweetened condensed milk, chopped up butter and 1/2 cup brown sugar in a sauce pan. Â Cook over med-low heat for 20-25 minutes, stirring constantly until it thickens and darkens just a bit to a creamy light brown.
Once it has, add your vanilla. Â Stir well and pour over the cookie base. Â Refrigerate for 20 minute until set.
Melt your milk chocolate, I used the microwave in 30 second intervals, you could also use a double boiler. Â Pour and spread evenly over the cookie and caramel.
Melt your white chocolate and drizzle with a plastic bag (cut the corner) or I actually just used a spoon to drizzle.
Again, refrigerate for 20-30 minutes to set. Â Â Let it sit out on the counter for at least 15 minute before cutting to avoid cracking.
Cut into little bite size squares! Enjoy! 🙂  I sent a bunch into work with the hubby as there is no way we could eat all of this at my house!
