This Chicken Noodle Casserole is one of my favorite meals, it is extremely easy to prepare and so so so good!! It is something that my mom used to make while I was growing up and now my kids love it, which is always a big plus! Leftovers are great the next day for lunch too!

Chicken Noodle Casserole
Ingredients:
Chicken Thighs or drumsticks WITH skins (this is important for the flavoring)
Rotini noodles
Box of chicken broth (32oz)
Can of Cream of Mushroom Soup (note: You can substitute this with Cream of Chicken or Cream of Celery, I prefer the Cream of Mushroom)
Directions:
Preheat the oven to 350.
Cook the Rotini Noodles until al dente (they cook more in the oven, so don’t overcook!)
Dump the noodles in casserole dish
Mix the Cream of Mushroom soup and box of Chicken broth together
Place the chicken on top of the noodles and dump all of the mixture over the top (you want this to fill up to the edge of the noodles)
Cook for 1 hour (until the chicken is fully cooked)
Eat! So tasty!

Hi. This recipe sounds great. We don’t get these noodles here in singapore.. Can we use fresh noodles or pasta? Does the pasta need yo be boiled al dente? And while baking do we cover the dish with foil?
If we need to add veggies to this maybe we can add mad way? Ok?

Hi Puja, You could use fresh noodles, I would recommend a spiral noodle of some kind. I don’t cover it with foil. I haven’t added veggies to the actual dish, but if raw they could be added at the beginning.

I use a full box of the Rotini Noodles for mine. And usually 6-8 thighs. It really depends on how many people you are feeding you could cut down on everything for just two people but 6-8 is good for the full recipe.
I made this tonight,it turns out to be a consistent hearty meal. The only thing I did differently was I added a head of cut up Broccoli, we really love it, thank you for sharing this recipe… it is a keeper!

I am in the middle of making this and big oops! All the ingredients don’t fit into my baking dish! I still have liquid left over. I assumed you used a regular 9X13 casserole. You didn’t mention the size and that’s what it looked like in the picture.
Hi Rita, I did! Some are deeper than others I think but you can always cut down on a bit of the chicken broth.
How many cans of cream of mushroom soup do you use?

What I ment to ask is what size can of cream of mushroom soup…a small or large can?

Yes it does!
I made this for supper tonight, and while we enjoyed the flavor, I would suggest that the recipe quantity of chicken broth is way too much! When I put everything in the 9×13 pan, I had almost half the soup/broth mixture left over after covering the noodles. And after baking, there was still a lot of liquid in the pan. Next time, I will only use 15-20 oz broth.
